Sweet and Sour Chicken

You will need:
1-2 pounds of boneless chicken breast, cut into bite size chunks
I can of pineapple -reserve the juice and slice the pineapple into bite size chunks
3 tablespoons ketchup ( I used the organic kind that isn't as sweet tasting as the normal brand)
1 teaspoon balsamic vinegar (this is what I had on hand I am sure apple cider vinegar would taste good in this as well)
A dash of sea or kosher salt
Oil for browning the chicken
3/4 cup of flour and some ground black pepper ( for dredging the chicken)
1-2 cups of mixed peppers (red, yellow, green) and onion

Directions: 

Dredge chicken pieces in flour/pepper mixture and  cook in oil until pieces are brown. Note: The chicken does not need to be fully cooked at this stage of the game. In a crockpot, combine all other ingredients to make sauce. Add the browned chicken and cook on low for 6 hours.


Serve over brown rice.

For a healthier version ditch the flour!
