With our CSA and the craziness of summer I'm finding it hard to stick to my meal plan. I decided to try out theme nights to help me better stick with my weekly plan.
*Friday is always a meatless day. To keep Friday meatless, I need to schedule a meatless dinner on Thursday as my husband usually eats leftovers for lunch. Sunday is a day of rest in our house so I need a big meal that can be easily put together or assembled ahead of time.
My summer theme nights:
Sunday- Big Family Meal
Monday- Sunday leftovers reinvented
Tuesday- Tex Mex
Wednesday- Chef's Choice try a new recipe or cook something that hasn't been made in awhile
Thursday- Meatless
Friday- Fish or Meatless
Saturday- Keeping it simple (Salad, Burgers, etc)
This week's Meal Plan:
Lemon Chicken with Tzatziki sauce
Falafel with Tzatziki Cole Slaw
Black Bean Tacos with Spanish Rice
Polish Cabbage Soup (recipe coming)
Potato and Cheese Pierogi, Roasted Carrots, Salad
Shrimp and Okra, Grits
